Spicy Fried Eggs with Onions and Chilies
Ingredients:
- 6 large eggs
- 6 shallots
- 2 red chilies
- 1 tomato
- Fresh bird’s eye chilies, to taste
- Sweet soy sauce, to taste
- Salt, to taste
Instructions:

Prepare the Vegetables:
- Slice the shallots, red chilies, and tomato thinly. If desired, you can also add minced garlic for extra flavor, though it is optional as it’s not a favorite in our household.

Fry the Eggs:
- Heat a little oil in a frying pan over medium heat. Fry the eggs one by one, seasoning each with a pinch of salt as you cook them. Set aside.

Sauté the Vegetables:
- In the same pan, add a bit more oil if necessary. Sauté the sliced shallots until they are soft and golden. Add the red chilies, tomato, and bird’s eye chilies, and continue cooking until everything is tender and fragrant.

Combine and Serve:
- Place the fried eggs on a serving plate. Sprinkle the sautéed shallots and chilies over the eggs. Drizzle with sweet soy sauce (I recommend Bangau soy sauce for its rich flavor).
- Serve hot with steamed rice and a side of salted fish or anchovies for a complete and delicious meal.
