  • Bouillon powder to taste
  • Seasoning powder (Motto) to taste
  • 8 curly chilies, sliced
  • 5 bird’s eye chilies, sliced
  • Oyster sauce to taste
  • Sweet soy sauce (Kecap Manis) to taste

For the Spice Mix for Frying:

  • 5 shallots, sliced
  • 3 garlic cloves, sliced
  • 2 cm turmeric, grated
  • Salt to taste
  • Seasoning powder (Motto) to taste
  • Bouillon powder to taste
  • Cooking oil for frying

Instructions

  1. Prepare the Fish:
    Begin by thoroughly washing the Nil fish to ensure it is clean. Set aside.

  2. Marinate the Fish:
    In a bowl, blend together the marinade ingredients: the sliced shallots, garlic, turmeric, salt, seasoning powder, bouillon powder, and a little water to form a paste. Add the fish to this mixture, ensuring each piece is well coated. Allow it to marinate for about 10 minutes to let the flavors penetrate the fish.

  3. Fry the Fish:
    In a frying pan, heat a generous amount of cooking oil over medium heat. Once hot, carefully add the marinated fish and fry until golden brown and cooked through. Once done, remove the fish from the pan and set aside on a plate.
