Telor Dadar Otak Kambing Recipe
Ingredients:
- 2 goat brains
- 2 eggs
- 1 tablespoon of Masako seasoning
- 3 shallots
- 1 clove of garlic
- 1 bunch of scallions
- 3 bird’s eye chilies
- Salt to taste
- 1 bay leaf
- A small piece of ginger and turmeric (about the size of a pinky nail)
- Oil for frying

Prepare the Goat Brains:
- Thoroughly wash the goat brains to ensure they are clean. Rinse all the seasonings and ingredients as well.

Steam the Brains:
- Crush the ginger and turmeric and mix them with the goat brains. Add the bay leaf. Steam the mixture for about 15 minutes until cooked through.

Prepare the Vegetables:
- Thinly slice the shallots, garlic, bird’s eye chilies, and scallions. Place them in a separate bowl. Mix in the Masako seasoning and salt.

- Once the goat brains are steamed and cooled slightly, discard the bay leaf. Mix the vegetables and seasonings with the eggs and steamed goat brains. Stir well to combine.

- Heat oil in a frying pan over medium heat. Pour the goat brain mixture into the pan and cook until the edges are golden brown and crispy.
