Instructions

  1. Prepare the Chicken: Begin by cleaning the chicken thighs thoroughly under running water. Pat them dry with a clean towel.

  2. Blend the Spices: In a blender, combine the garlic, turmeric, ginger, and galangal. Blend until smooth. Transfer the spice mixture to a pot, and add the chicken thighs. Allow the chicken to marinate in the blended spices for approximately 10 minutes.

  3. Cooking the Chicken: Add enough water to the pot to submerge the chicken. Bring the pot to a boil over medium heat, ensuring that the chicken is cooked through.

  4. Add the Aromatics: Once the chicken is boiling, introduce the lemongrass, bay leaves, and kaffir lime leaves into the pot. Allow the mixture to simmer until the chicken is tender and infused with the aromatic flavors.

  5. Incorporate Tofu and Tempeh: Gently add the tofu and tempeh pieces to the pot, stirring occasionally to coat them in the flavorful broth. Continue to simmer until the liquid reduces and thickens, ensuring the tofu and tempeh absorb the flavors.

  6. Finishing Touches: Once the liquid has significantly reduced and the dish looks flavorful and aromatic, remove it from heat.

  7. Serve or Store: Serve the dish hot, or allow it to cool completely before storing it in the refrigerator for later use. This dish can be fried at any time for a delicious meal.

Chef’s Note

This is my first attempt at creating this dish based on a recipe from my friend, Mba Risma, and I made some adjustments to the seasoning to suit my taste. It turned out incredibly delicious! For an even richer flavor, consider marinating the chicken in the spice blend for a longer period before cooking. Not only is it perfect for immediate enjoyment, but it also makes for fantastic leftovers. You can store it in the refrigerator and fry it whenever you desire.
