Instructions

  1. Preheat your oven to 400°F (200°C) to prepare for baking.
  2. In a skillet, heat 1 tablespoon of olive oil over medium heat, and add the minced garlic, sautéing briefly until fragrant.
  3. Add the diced tomatoes to the skillet and cook for about one minute, then season with salt, pepper, white wine, fresh basil, and dried oregano. Allow this mixture to simmer over medium heat for approximately 10 minutes.
  4. While the sauce simmers, season the shrimp with salt and pepper. In a large skillet, heat the remaining 4 tablespoons of olive oil, then add the shrimp, cooking for about 1 minute, or until they turn pink and opaque.
  5. Once cooked, sprinkle the shrimp with red pepper flakes and transfer them along with any pan juices into a small baking dish.
  6. Crumble the feta cheese over the shrimp, then spoon the prepared tomato sauce on top.
  7. Bake in the preheated oven for 10 minutes, allowing the flavors to meld beautifully.
  8. Meanwhile, cook the rigatoni (or spiral-shaped pasta) according to the package instructions. Be careful not to overcook; you want it al dente.
  9. Once the pasta is cooked, drain it and serve, spooning the succulent shrimp mixture over the rigatoni.

This dish serves four and pairs wonderfully with a crisp salad or crusty bread for dipping. Enjoy a taste of Greece with every bite!
