Ingredients:

  • 6 green tomatoes
  • 1 chorizo sausage
  • 1/2 cup mushrooms
  • 1 onion
  • 2 tablespoons flour, plus extra if needed
  • 3/4 cup Monterey Jack cheese
  • 3 tablespoons olive oil

Instructions:

  1. Preheat Oven: Preheat your oven to 400°F (200°C).

  2. Cook Tomatoes: Slice the green tomatoes and place them in a heavy pot. Cover and cook over medium-low heat until softened, about 20-30 minutes.

  3. Prepare Chorizo: While the tomatoes are cooking, remove the chorizo from its casings, crumble it, and fry it in a large frying pan with 1 tablespoon of olive oil until browned.
