Grilled Catfish with Soy Sauce and BBQ Glaze

Ingredients:

  • 3 fresh catfish
  • 1 lime
  • 4 cloves garlic
  • 1 teaspoon ground coriander
  • A pinch of turmeric
  • Salt, to taste
  • Water, as needed
  • 1 tablespoon cooking oil
  • 1 tablespoon butter
  • 1 tablespoon soy sauce
  • 1 tablespoon BBQ sauce
  • Sweet soy sauce, to taste
  • 2 tablespoons hot water

Instructions:

  1. Prepare the Catfish: Begin by cutting the catfish according to your preference. (For a traditional touch, you might want to keep the tail and head for a special pickled dish.) Rinse the fish thoroughly and set aside.

  2. Marinate the Fish: Squeeze the lime over the catfish to cleanse and tenderize. Let it sit for a few minutes, then rinse thoroughly to remove any excess lime juice.

  3. Make the Marinade: In a mortar and pestle or food processor, blend the garlic, ground coriander, turmeric, and a pinch of salt with a little water to form a smooth paste.

  4. Season the Fish: Coat the catfish with the prepared marinade and allow it to marinate for 1 to 2 hours, allowing the flavors to infuse into the fish.

  5. Prepare the Glaze: In a bowl, combine the cooking oil, butter, soy sauce, BBQ sauce, sweet soy sauce, and hot water. Mix well until the ingredients are fully incorporated.

  6. Grill the Fish: Preheat a non-stick skillet or grill pan over low heat. Brush the catfish with the prepared glaze, ensuring an even coating. Cook the catfish slowly on low heat to avoid breaking the fish apart. Avoid flipping the fish frequently to ensure it remains intact.

  7. Serve: Once the catfish is thoroughly cooked, serve it hot with your choice of sambal and fresh vegetables or side dishes.

Enjoy your flavorful grilled catfish, a delightful and savory dish perfect for any meal!
