Grilled Mackerel with Simple Spices

Ingredients:

  • 5 large mackerel (ikan kembung)
  • Ground Spices:
    • 1 garlic clove
    • Black pepper, to taste
    • 2 pieces of turmeric (about 2 inches long)
    • 1 piece of ginger (about 2 inches long)
    • 1/2 small packet of shrimp paste (terasi)
    • 2 tomatoes
    • Sugar, to taste
    • Seasoning (optional, to taste)
    • Cooking oil, as needed

Instructions:

  1. Prepare the Fish:

    • Begin by thoroughly cleaning the mackerel under cold running water. Make sure to remove any scales and internal organs. Once cleaned, make several shallow cuts along the sides of each fish to allow the marinade to penetrate better.
  2. Prepare the Spice Paste:

    • In a blender or food processor, combine the garlic clove, black pepper, turmeric, ginger, shrimp paste, and tomatoes. Blend until the mixture forms a smooth paste. Adjust the consistency by adding a bit of water if necessary.
  3. Marinate the Fish:

    • Place the cleaned mackerel in a large bowl. Generously rub the prepared spice paste all over the fish, ensuring it gets into the cuts you made. Add a splash of cooking oil to the bowl to help the paste adhere better and mix well.
  4. Grill the Fish:

    • Preheat your grill to medium-high heat. Place the marinated mackerel on the grill. Cook for about 4-5 minutes on each side, or until the fish is cooked through and has a nice char. During grilling, periodically brush the fish with any leftover spice paste for extra flavor.
  5. Serve:

    • Once grilled to perfection, remove the mackerel from the grill. Serve hot, garnished with fresh herbs or a squeeze of lime if desired.
