Grilled Tilapia with Shrimp Paste

Ingredients

For the Fish:

  • 2 whole tilapia, scored
  • 1/2 tablespoon lime juice
  • 1/2 tablespoon salt
  • 1 tablespoon tamarind water
  • 3 tablespoons sweet soy sauce
  • 3 tablespoons vegetable oil for sautéing

For the Spice Paste:

  • 6 shallots
  • 3 cloves garlic
  • 3 large red chilies
  • 4 curly red chilies
  • 2 bird’s eye red chilies
  • 1/2 tablespoon coriander seeds
  • 2 teaspoons shrimp paste
  • 2 cm ginger
  • 1 teaspoon salt

Instructions

  1. Prepare the Fish: Begin by rubbing the tilapia with lime juice and salt, ensuring it’s well-coated. Allow it to marinate for about 15 minutes to enhance the flavors.

  2. Sauté the Spice Paste: In a pan, heat the vegetable oil over medium heat. Add the ground spice paste and sauté until fragrant, filling your kitchen with its delightful aroma. Pour in the tamarind water and stir well. Once combined, remove from heat and add the sweet soy sauce, mixing thoroughly.

  3. Marinate Again: Generously brush the prepared spice mixture over the marinated tilapia. Let it rest for an additional 10 minutes to absorb the flavors.

  4. Grill the Fish: Preheat your grill to medium-high heat. Place the tilapia on the grill, basting with any remaining spice mixture as it cooks. Grill until the fish is fully cooked and has a nice char.

  5. Serve: Once cooked, serve your grilled tilapia hot, accompanied by a side of spicy soy sauce for an extra kick.

This delightful dish combines the rich flavors of the spice paste with the tender fish, making it a perfect centerpiece for any meal. Enjoy the smoky essence of grilled tilapia that’s infused with a medley of aromatic ingredients!
