Beef Patties with Chimichurri Sauce

Description:
Fresh from the herb garden, oregano and parsley, this sauce makes these burgers outstanding!! Serve on your choice of bun or with mashed potatoes and fresh tomato salad. From Canadian Living magazine, these beef patties with chimichurri sauce are sure to delight your taste buds!
Ingredients:
- 1 egg
- 2/3 Spanish onion, finely chopped
- 1/3 cup light sour cream
- 1/3 cup minced garlic
- 3 tbsp fresh parsley, finely chopped
- 1 tsp salt
- 1 tsp pepper
- 1 lb lean ground beef
- 1/4 cup fresh parsley, finely chopped
- 1/4 cup fresh oregano, finely chopped
- 1 tbsp extra virgin olive oil
- 1 tbsp red wine vinegar
- 2 cloves garlic, minced
- 2 tbsp water
- 1 jalapeno pepper, seeded and minced
Instructions:
- In a bowl, beat the egg; mix in cornflakes, onion, sour cream, garlic, parsley, salt, and pepper until well combined.
- Mix in the lean ground beef until all ingredients are evenly distributed.
- Shape the mixture into four 1/2-inch thick patties.
- In a nonstick frypan, heat the olive oil over medium-high heat; cook the patties, turning once, until no longer pink inside, about 10 minutes or until desired doneness is achieved.
- Meanwhile, prepare the Chimichurri Sauce:
- In a mini chopper or food processor, finely chop together the parsley, oregano, olive oil, water, red wine vinegar, jalapeno pepper, garlic, salt, and pepper until a smooth sauce forms.
- Serve the chimichurri sauce generously over the cooked beef patties.
- Optionally, serve the beef patties with chimichurri sauce on your choice of bun or alongside mashed potatoes and a fresh tomato salad for a complete and satisfying meal.
