Rosemary Chicken & Potato Pizza

Cook Time: 20 minutes
Prep Time: 1 hour
Total Time: 1 hour and 20 minutes
Servings: 1 large pizza

Description:
Don’t let the long list of ingredients scare you off. Most people have all of these items in their cupboard, and the various steps can be accomplished far ahead and the pizza can be assembled right before dinner. I usually make the toppings the morning I’m making this. If you love roast chicken and potatoes, try this – you’ll love it.

Ingredients:

Quantity Ingredient
5 tbsp unsalted butter
1/4 cup shallots
4 onion
1 minced garlic cloves
1/4 tsp fresh thyme
1 dried thyme
1/3 tsp salt
1 fresh ground pepper
3/4 tsp lemon juice
2 small red potato
1 garlic cloves
2 tsp fresh oregano
1/4 tsp dried oregano
1 fresh rosemary
2 tsp dried rosemary
3/4 tsp fresh ground pepper
1 tsp kosher salt
2 tbsp olive oil
1 garlic clove
1 tsp soy sauce
1 1/2 tsp kosher salt
2 tbsp olive oil
3 boneless skinless chicken breast
4 oz mozzarella cheese
1 tsp fresh rosemary
1 tsp fresh oregano
1 tsp fresh parsley

Instructions:

  1. Garlic-Shallot Butter:

    • Melt 1 tablespoon butter in a non-stick saucepan over medium-high heat.
    • Add the shallot, garlic, and thyme and cook until the shallot softens and begins to turn golden brown.
    • Add salt, pepper, stock, and lemon juice.
    • Cook until the mixture is reduced to 1/2 cup. Remove from heat and whisk in the remaining butter. Set aside.
  2. Potatoes:

    • Preheat the oven to 325°F.
    • Combine potatoes with remaining ingredients and toss to coat thoroughly.
    • Transfer slices to a sheet pan in a single layer. Bake for about 45 minutes until golden brown. Flip slices halfway through if needed.
    • Let the potatoes cool to room temperature. Do not refrigerate.
  3. Chicken:

    • Combine garlic, soy sauce, salt, and olive oil. Marinate chicken for 15 minutes.
    • Grill or cook on the stovetop until done, about 5 to 7 minutes per side. Let rest for 10 minutes, then cut into cubes and set aside.
  4. Pizza:

    • Preheat the oven to 500°F. If using a pizza stone or tiles, place them in the oven.
    • Spread 2 tablespoons of garlic-shallot butter over the pizza dough.
    • Layer with mozzarella cheese, chicken cubes, fresh rosemary, oregano, and potatoes.
    • Bake until crisp, golden, and bubbly, about 8 to 10 minutes.
    • Sprinkle fresh parsley over the pizza, slice, and serve hot.

This Rosemary Chicken & Potato Pizza is a savory delight, combining the flavors of roast chicken, potatoes, and aromatic herbs. Enjoy this homemade pizza for a cozy family dinner or impress your guests at your next gathering! 🍕✨
