Description:

This Turkey Loaf recipe is not just for South Beach Dieters; it’s a savory delight for anyone seeking a flavorful, protein-packed meal. With the perfect blend of ground turkey, zucchini, and aromatic herbs, it’s a wholesome dish that satisfies the taste buds. Plus, it’s oven-baked, making it a convenient option for any occasion, from weeknight dinners to potluck gatherings.

Ingredients:

  • 1 can (6 ounces) no-added-salt tomato paste
  • 1/2 cup dry red wine
  • 1/2 cup water
  • 1 garlic clove, minced
  • 1/2 teaspoon dried basil leaves
  • 1/4 teaspoon dried oregano
  • 1/4 teaspoon salt
  • 1 pound ground turkey
  • 1 cup oatmeal
  • 1/2 cup egg substitute
  • 1 zucchini, grated

Instructions:

  1. Preheat the Oven: Preheat your oven to 350Β°F (175Β°C).

  2. Prepare the Tomato Sauce: In a small saucepan, combine the tomato paste, red wine, water, minced garlic, basil, oregano, and salt. Bring the mixture to a boil over medium heat, then reduce the heat to low and let it simmer uncovered for about 15 minutes. Set the sauce aside.

  3. Mix the Turkey Mixture: In a large mixing bowl, combine the ground turkey, oatmeal, egg substitute, grated zucchini, and 1/2 cup of the prepared tomato sauce. Mix everything together until well combined.

  4. Shape the Loaf: Shape the turkey mixture into a loaf and place it in an ungreased 8″ x 4″ loaf pan.

  5. Bake: Bake the turkey loaf in the preheated oven for 45 minutes.

  6. Add Tomato Sauce: After 45 minutes, remove the loaf from the oven and discard any drippings. Pour 1/2 cup of the remaining tomato sauce over the top of the loaf.

  7. Bake Again: Return the loaf to the oven and bake for an additional 15 minutes, or until the turkey is cooked through and the sauce is bubbling.

  8. Serve: Once done, transfer the turkey loaf to a serving platter and allow it to cool for about 10 minutes before slicing. Serve with the remaining tomato sauce on the side.
