Homemade Beef Meatballs with Soun

If youโ€™re looking for a delicious and hearty homemade meatball recipe, look no further. This dish combines savory beef meatballs with delicate soun (bean thread noodles) in a flavorful broth, perfect for a comforting meal. Hereโ€™s how you can make it:

Ingredients

  • 1/4 lb (115 g) ground beef
  • A pinch of ground nutmeg
  • 2 cloves garlic, finely chopped
  • 3 shallots, thinly sliced
  • Salt, to taste
  • White pepper and dried shrimp, ground, to taste
  • 1 tablespoon sesame oil
  • 2 tablespoons cooking oil
  • 2 tablespoons tapioca flour
  • 1/2 teaspoon baking soda
  • A few ice cubes (to enhance the meatball mixture)
  • Soun (bean thread noodles)

Steps

  1. Prepare the Meatball Mixture: Begin by grinding or blending the beef along with the sautรฉed shallots and garlic. Add the sesame oil to the mixture.

  2. Mix Ingredients: Transfer the ground beef mixture into a bowl. Incorporate the tapioca flour, salt, ground white pepper, ground dried shrimp, ground nutmeg, baking soda, and ice cubes. Stir well until the mixture is smooth and has a slightly thick consistency. It should neither be too thick nor too runny.

  3. Shape and Cook Meatballs: Bring a pot of water to a gentle boil. Using a spoon, shape the beef mixture into meatballs and drop them into the boiling water. You can also shape them according to your creativityโ€”doesnโ€™t have to be round! Once the meatballs float to the surface, remove them from the water and let them drain.

  4. Prepare Soun: Cook the soun in the same broth used to cook the meatballs. Season with additional ground white pepper, salt, and MSG if desired. Serve the soun and meatballs in a bowl while hot.

This simple and flavorful recipe brings a taste of homemade comfort right to your table. Enjoy your meal!
