Title: Homemade Chicken Oil (Minyak Ayam)

Ingredients:

  • 100 grams of chicken skin and fat
  • 3 cloves garlic, smashed and roughly chopped
  • 1 teaspoon coriander seeds
  • 1 cm piece of ginger, smashed
  • 100 ml vegetable oil

Instructions:

  1. Heat the vegetable oil in a pan over medium heat. Add the smashed ginger and sauté until fragrant.
  2. Add the chicken skin and fat to the pan. Stir to combine and cook until the skin starts to turn a deep golden brown.
  3. Incorporate the chopped garlic and coriander seeds into the pan, continuing to cook until the chicken skin is crisp and deeply golden.
  4. Once the chicken skin is fully cooked and has a rich golden color, remove the pan from heat and allow the mixture to cool slightly.
  5. Strain the oil through a fine mesh sieve or cheesecloth to remove the solids.
  6. Store the strained chicken oil in a clean, airtight container. It can be used to enhance the flavor of various dishes or as a cooking fat for your favorite recipes.
