Ingredients:
- 100 grams of chicken skin and fat
- 3 cloves garlic, smashed and roughly chopped
- 1 teaspoon coriander seeds
- 1 cm piece of ginger, smashed
- 100 ml vegetable oil
Instructions:
- Heat the vegetable oil in a pan over medium heat. Add the smashed ginger and sauté until fragrant.
- Add the chicken skin and fat to the pan. Stir to combine and cook until the skin starts to turn a deep golden brown.
- Incorporate the chopped garlic and coriander seeds into the pan, continuing to cook until the chicken skin is crisp and deeply golden.
- Once the chicken skin is fully cooked and has a rich golden color, remove the pan from heat and allow the mixture to cool slightly.
- Strain the oil through a fine mesh sieve or cheesecloth to remove the solids.
- Store the strained chicken oil in a clean, airtight container. It can be used to enhance the flavor of various dishes or as a cooking fat for your favorite recipes.
