Homemade Mie Ayam Recipe
Ingredients:

For the Mie Ayam:
- 1/2 kg fresh noodles (serves approximately 7)
- 1/4 chicken breast fillet

For the Seasoning:
- 5 cloves garlic
- 3 shallots
- 1 thumb-sized piece of ginger
- 1 teaspoon ground coriander
- 1 teaspoon ground nutmeg
- 3 tablespoons sweet soy sauce (kecap manis)
- 1 tablespoon soy sauce (kecap asin)
- 5 lettuce leaves
- 10 bird’s eye chilies (for sambal)

Prepare the Chicken:
- Dice the chicken breast fillet into small cubes and rinse thoroughly. Squeeze lime juice over the chicken and let it marinate for about 5 minutes.

Prepare the Aromatics:
- Peel and finely chop the garlic and shallots. Peel the ginger and slice it thinly. Grind these ingredients together into a paste using a mortar and pestle or a food processor.

Cook the Aromatics:
- Heat a small amount of oil in a pan over medium heat. Add the garlic, shallots, and ginger paste. Sauté until fragrant and golden brown.

Cook the Chicken:
- Add the marinated chicken breast fillet to the pan. Stir-fry until the chicken is well-cooked and slightly browned.

Season the Chicken:
- Stir in the sweet soy sauce, soy sauce, ground nutmeg, ground coriander, a pinch of sugar, salt, and pepper. Mix well to ensure the chicken is evenly coated with the seasoning.

- Pour in 1/2 cup of water and stir. Allow the mixture to come to a boil, then reduce the heat and let it simmer until the sauce has slightly thickened and the flavors are well combined. Taste and adjust seasoning if needed.

- In a separate pot, bring water to a boil. Cook the fresh noodles for a short time, just until they are heated through and tender. Drain the noodles and set aside.

- In a serving bowl, add a splash of soy sauce. Place the cooked noodles into the bowl. Top with the cooked chicken and sauce mixture.

- Slice the lettuce leaves into thin strips and scatter them over the noodles. Serve with sambal on the side. To prepare the sambal, boil the bird’s eye chilies until softened, then roughly grind them into a coarse paste.
