Hotel-Style Omelette

Ingredients:

  • 2 tablespoons unsalted butter
  • 2 tablespoons finely chopped onion
  • 1 stalk green onion, sliced
  • 30 grams ground chicken (preferably from a marinated chicken recipe)
  • 1 slice smoked ham, diced
  • 2-3 champignon mushrooms, chopped (optional)
  • 100 ml heavy cream
  • 4 eggs, lightly beaten
  • A pinch of sea salt and freshly ground black pepper
  • Parmesan cheese, for sprinkling

Instructions:

  1. Prepare the Pan: Heat a non-stick skillet over medium heat and melt the butter until it begins to foam.

  2. Sauté Aromatics: Add the chopped onion and green onion to the skillet. Sauté until fragrant and the onions are translucent.

  3. Cook the Meat: Add the ground chicken, diced ham, and mushrooms (if using). Continue cooking until the chicken is browned and all ingredients are well-caramelized.

  4. Add Cream: Pour in the heavy cream and bring to a gentle simmer. Stir frequently to ensure the chicken is fully cooked and the flavors meld.

  5. Incorporate Eggs: Slowly pour the beaten eggs into the skillet, stirring gently to combine with the cream mixture. Continue stirring until the eggs are almost set.

  6. Form the Omelette: Use a spatula to divide the egg mixture into two compact sections. Allow the omelette to cook undisturbed for a moment.

  7. Flip and Finish: Carefully flip each section of the omelette. Cook briefly, ensuring the center remains moist.

  8. Garnish and Serve: While still hot, sprinkle with Parmesan cheese to taste. Serve immediately with a side of fermented chili sauce if desired (though the omelette is delicious on its own).
