Krengseng Daging Sapi & Kentang: A Savory Indonesian Beef and Potato Delight

Krengseng Daging Sapi & Kentang is a flavorful Indonesian dish that marries tender beef with hearty potatoes in a rich and savory sauce. Ingredients:

  • 500 grams beef (cut into slices or chunks, as preferred; I used thin slices)
  • 4 medium potatoes (peeled and cut into chunks)
  • 6 cloves garlic
  • 5 shallots
  • 4 red chilies
  • 5 bird’s eye chilies (adjust to taste for heat)
  • 5 tablespoons sweet soy sauce (kecap manis)
  • 2 tablespoons shrimp paste (petis udang)
  • Salt (to taste)
  • Black pepper (to taste)
  • Beef bouillon powder (to taste)
  • Palm sugar (to taste)
  • Cooking oil (for sautéing)
  • 750 ml water

Instructions:

  1. Prepare the Spice Paste:

    • Blend the shallots, garlic, and 3 of the red chilies until smooth. This will create the base of your spice paste.
  2. Cook the Spice Paste:

    • Heat a small amount of cooking oil in a large pot over medium heat.
    • Add the blended spice paste to the pot and sauté until fragrant.
  3. Add the Beef:

    • Add the beef slices to the pot and stir well. Cook until the beef releases its juices.
  4. Season the Beef:

    • Pour in 750 ml of water.
    • Season with salt, palm sugar, black pepper, shrimp paste, sweet soy sauce, and beef bouillon powder. Stir to combine all the seasonings.
    • Taste the sauce and adjust the seasoning as needed.
  5. Simmer the Beef:

    • Allow the mixture to come to a boil. Once boiling, reduce the heat and let it simmer. Cook until the sauce starts to reduce and thicken slightly.
  6. Add the Potatoes:

    • Once the sauce has started to thicken, add the cut potatoes to the pot.
  7. Add the Chilies:

    • Slice the remaining red chilies and the bird’s eye chilies. Add them to the pot with the potatoes.
  8. Continue Cooking:

    • Stir everything gently. Continue to simmer until the potatoes are tender and the beef is fully cooked. The sauce should reduce and coat the ingredients well.
  9. Finish and Serve:

    • Once the sauce has thickened and the potatoes are soft, remove from heat.
