This hearty and flavorful Indonesian dish, Tumis Kentang Daging Sapi, combines tender beef with golden potatoes and a mix of aromatic spices. Perfect for a comforting meal, it can be customized to suit your taste preferences. Here’s how you can make this savory delight:

Ingredients

Spices:

  • 1 tablespoon sugar
  • 1 teaspoon salt
  • Seasoning (optional)
  • 1 tablespoon sweet soy sauce
  • 1 tablespoon chili sauce
  • 1/4 teaspoon ground black pepper

Main Ingredients:

  • 1/4 kilogram beef, cut into cubes
  • 1 medium potato, peeled and cut into chunks
  • 3 shallots, thinly sliced
  • 2 garlic cloves, minced
  • 2 bay leaves
  • 2 cm galangal, sliced
  • 1 small tomato, chopped
  • 3 red curly chilies, sliced
  • 3 green curly chilies, sliced
  • A handful of red and green bird’s eye chilies
  • 1 stalk green onion, chopped

Instructions

  1. Prepare the Beef:

    • Clean the beef thoroughly and cut it into bite-sized cubes.
    • Boil the beef in water until it becomes tender. Reserve some of the beef broth for later use.
  2. Prepare the Vegetables:

    • Slice all the aromatic ingredients: shallots, garlic, red curly chilies, green curly chilies, and galangal. Chop the tomato and green onion.
    • Peel and cut the potato into chunks. Fry the potato pieces in oil until they are slightly golden. If you prefer, you can also boil the potatoes instead of frying them.
  3. Cook the Aromatics:

    • Heat oil in a pan and sauté the shallots, garlic, red and green chilies, and galangal until fragrant.
    • Add the reserved beef broth to the pan to enhance the flavor.
  4. Combine Ingredients:

    • Add the cooked beef and fried (or boiled) potatoes to the pan.
    • Season with salt, sugar, seasoning (if using), sweet soy sauce, ground black pepper, and chili sauce. Mix well.
    • Allow the dish to cook until the sauce thickens and the flavors meld together.
  5. Finish the Dish:

    • Once the sauce has reduced to your desired consistency, add the chopped tomato and green onion.
    • Stir well and cook for an additional minute to incorporate the fresh flavors.
  6. Serve:

    • Transfer the Tumis Kentang Daging Sapi to a serving dish and enjoy!
