  • 2 teaspoons baking soda
  • 2 teaspoons salt
  • 2 teaspoons black pepper
  • ½ teaspoon ground nutmeg
  • 1 cup crushed ice
  • 3-4 liters (3-4 quarts) water for boiling

Instructions

  1. Prepare the Boiling Water:
    Begin by bringing 3-4 liters of water to a boil in a large pot. This water will be used to cook the meatballs. While the water is heating, you can prepare the meatball mixture.

  2. Make the Meatball Mixture:

    • In a food processor or blender, combine the ground beef and ground chicken.
    • Add the raw eggs, salt, black pepper, minced garlic, fried shallots, baking soda, and crushed ice to the meat mixture.
    • Blend or process the mixture until it is smooth and well combined. If your blender cannot handle all the meat at once, you may need to process it in batches.
  3. Incorporate the Tapioca Flour:

    • Once the meat mixture is smooth, transfer it to a large bowl.
    • Gradually mix in the tapioca flour and ground nutmeg.
    • Knead the mixture until it is well blended and smooth.
  4. Let the Mixture Rest:
    Allow the meat mixture to rest for about 10 minutes. This will help the flavors meld together and improve the texture of the meatballs.

  5. Shape the Meatballs:

    • Once the water is boiling, reduce the heat to low to prevent the water from boiling vigorously.
