Welcome to another delightful journey into Indonesian cuisine! Today, we’re making Tongseng Daging Sapi, a savory beef stew that’s rich in flavor and perfect for any occasion. This dish is a harmonious blend of tender beef, fresh vegetables, and aromatic spices simmered in creamy coconut milk. Let’s dive into the recipe!

Ingredients

  • 500 grams Beef (cut into small pieces)
  • 1/4 head Cabbage (chopped to your preference)
  • 500 ml Coconut Milk
  • 3 Kaffir Lime Leaves
  • 2 Stalks Lemongrass (bruised)
  • 2 cm Galangal (sliced)
  • 1 Tomato (chopped)
  • 5 Bird’s Eye Chilies
  • 5 Red Chilies
  • 1 liter Water
  • 2 tablespoons Sweet Soy Sauce
  • 1 Pack of Beef Flavor Seasoning
  • Spice Paste:
    • 5 Cloves Garlic
    • 7 Shallots
    • 5 Candlenuts
    • 3 cm Ginger
    • 5 cm Turmeric (pre-roasted)
    • 1 teaspoon Black Pepper
    • 1 teaspoon Coriander Seeds
    • A pinch of Salt

Instructions

  1. Prepare the Beef:

    • Begin by boiling the beef in water until it is tender. Once cooked, cut the beef into small, bite-sized pieces.
  2. Make the Spice Paste:

    • In a blender or mortar, grind together the garlic, shallots, candlenuts, ginger, roasted turmeric, black pepper, coriander seeds, and salt until you have a smooth paste.
  3. Cook the Base:

    • In a separate pot, combine the water and coconut milk over medium heat. Stir occasionally to prevent the milk from curdling. Add the ground spice paste, kaffir lime leaves, galangal, lemongrass, and a pinch of salt. Stir until it starts to boil.
  4. SautΓ© the Chilies:

    • In a skillet, sautΓ© the shallots, bird’s eye chilies, and red chilies until fragrant. This step enhances the depth of flavor in the dish.
  5. Combine Ingredients:

    • Add the sautΓ©ed chilies to the pot with the boiling coconut milk and spice base. Then, add the beef pieces and cabbage. Stir well and let it cook until the cabbage is tender.
  6. Season the Stew:

    • Pour in the sweet soy sauce and mix well. Add the tomato pieces and beef flavor seasoning. Adjust the seasoning with additional salt and a bit of sugar to taste. Let it simmer until all the flavors meld together and the stew thickens.
  7. Final Touches:

    • Taste the stew and adjust the seasoning as needed. Once it’s cooked to your liking, remove the pot from heat. Serve hot with steamed rice for a complete and hearty meal.

Enjoy your homemade Tongseng Daging Sapi, a comforting and flavorful Indonesian dish that’s sure to impress! Feel free to share your thoughts or any variations you’ve tried. Happy cooking!
