Siomay Abon Sapi is an enticing Indonesian dumpling dish that combines savory beef floss (abon sapi) with a blend of spices and vegetables, resulting in a delectable treat perfect for any occasion. This recipe includes detailed steps for making the dumplings from scratch, steaming them to perfection, and preparing a delicious peanut sauce to accompany them. Here’s a comprehensive guide to making Siomay Abon Sapi:

Ingredients

For the Dumpling Mixture:

  • Ingredient A:

    • 9 cloves garlic, peeled, washed, and grated with a cheese grater
  • Ingredient B:

    • 1 stalk green onion, washed and finely chopped
  • Ingredient C:

    • 150 grams beef floss (abon sapi)
    • 100 grams tapioca flour
    • 50 grams all-purpose flour
    • Salt to taste
  • Ingredient D:

    • 1 egg
    • 2 tablespoons sesame oil
    • 2 tablespoons oyster sauce
    • 1 sachet of coconut milk (65 ml)

For the Peanut Sauce:

  • 100 grams roasted peanuts
  • 50 grams palm sugar, finely shaved
  • 5 cloves garlic, peeled and fried
  • 5 red bird’s eye chilies, washed and fried
  • 5 kaffir lime leaves, washed
  • 300 ml water
  • Salt to taste

For Garnishing and Serving:

  • Tahu bakso (fried tofu)
  • 1 cucumber, sliced

Instructions

  1. Prepare the Dumpling Mixture:

    • In a large bowl, combine Ingredient A (grated garlic), Ingredient B (chopped green onion), and Ingredient C (beef floss, tapioca flour, all-purpose flour, and salt). Mix thoroughly using a spatula.
    • Add Ingredient D (egg, sesame oil, oyster sauce, and coconut milk) to the mixture. Stir well until all ingredients are fully combined and the mixture is smooth.
  2. Cook the Dumplings:

    • Before cooking the dumplings, bring a pot of water to a boil. Once boiling, add 1 tablespoon of cooking oil to the water.
    • Shape the dumpling mixture into small balls or oval shapes and carefully drop them into the boiling water.
    • Let the dumplings cook until they float to the surface. Allow them to cook for an additional 10 minutes, then remove them from the water and drain.
  3. Steam the Dumplings:

    • In a separate pot, bring water to a boil for steaming.
    • Place the boiled dumplings into a steamer basket and steam over medium heat for 25 minutes. Ensure the steam is consistent for even cooking.
  4. Prepare the Peanut Sauce:

    • In a blender, combine the roasted peanuts, palm sugar, fried garlic, fried bird’s eye chilies, and kaffir lime leaves. Blend until smooth.
    • Transfer the blended mixture to a saucepan, add water, and cook over medium heat. Stir frequently to prevent burning.
    • Once the mixture begins to simmer, add salt to taste. Continue cooking until the sauce thickens to your desired consistency, about 10 minutes. Remove from heat and set aside.
  5. Serve:

    • Arrange the steamed dumplings on a serving plate. Garnish with tahu bakso (fried tofu) and cucumber slices.
    • Drizzle or serve the peanut sauce on the side, allowing guests to add as much or as little as they prefer.

Tips:

  • When forming the dumplings, lightly flour your hands to prevent the mixture from sticking.
  • For an even more flavorful sauce, you can adjust the spice levels by adding more bird’s eye chilies or a splash of soy sauce for extra depth.

Enjoy your Siomay Abon Sapi as a delicious appetizer or a hearty meal. The combination of tender dumplings with rich peanut sauce offers a taste of Indonesia that is both satisfying and nutritious. Bon appétit!
