Terik Sapi Solo: A Delightful Indonesian Beef Heart Dish

Ingredients:

  • 500 grams of beef heart, cleaned and cut into large cubes
  • 100 ml thick coconut milk (instant)
  • 500 ml thin coconut milk
  • Ground Spices:
    • 6 shallots
    • 4 cloves of garlic
    • 2 candlenuts, toasted
    • 1 teaspoon coriander seeds, toasted
    • 2 tamarind pieces
  • Additional Ingredients:
    • 2 pieces of palm sugar, shaved
    • 3 bay leaves
    • 1 segment of galangal
    • Salt to taste
    • 1 medium tomato, cut into quarters

Instructions:

  1. Prepare the Beef Heart: Start by thoroughly cleaning the beef heart and cutting it into large cubes. The pieces will shrink during cooking, so larger chunks are preferable.

  2. Marinate: Rub the beef heart cubes with the ground spices until the meat is well coated. Allow it to marinate for about 15 minutes to let the flavors infuse.

  3. Cook: Place the marinated beef heart into a pot along with the thin coconut milk and additional ingredients, except for the tomato. Cook over low heat, stirring occasionally, until the coconut milk reduces and the liquid evaporates. Be sure to check the seasoning and adjust as needed.

  4. Finish Cooking: Once the coconut milk has reduced and the meat is nearly tender, add the tomato quarters to the pot. Cook until the tomato is just wilted.

  5. Note: If the beef heart is not yet tender, you can add additional warmed thin coconut milk to the pot. Continue cooking until the meat is completely tender. For beef heart, additional coconut milk is usually not necessary as it tends to become tender quite easily.
