Bakso Sapi Kenyaal Enak (Without Baking Powder)
Ingredients:
- 750 grams of beef (trimmed of fat)
- 150 grams of sago flour
- 1 egg white
- 3 cloves garlic, minced
- 5 cloves garlic, thinly sliced, fried until crispy and then minced
- 200 grams of ice cubes (approximate)
- Salt, sugar, and pepper to taste

Prepare the Beef: Cut the beef into small pieces. In batches, blend the beef along with the ice cubes until finely minced. The ice cubes help keep the meat cold and maintain the right texture.

Combine Ingredients: Once all the beef is blended, transfer it to a mixing bowl. Add the minced garlic, egg white, sago flour, salt, sugar, and pepper. Mix thoroughly until all ingredients are well incorporated.

Form the Meatballs: Heat a large pot of water and bring it to a boil. Once boiling, turn off the heat. Use your hands and a spoon to shape the meat mixture into small meatballs. Drop each meatball into the hot water. Repeat until all the meat mixture is used up.

Cook the Meatballs: Turn the heat back on and simmer the meatballs until they float to the surface, indicating they are cooked through. Remove the meatballs with a slotted spoon and transfer them to a bowl of ice water to cool. Once chilled, drain the meatballs and they are ready to eat.

Prepare the Broth: For the broth, use the stock from boiling beef bones. Add beef bouillon powder, salt, sugar, pepper, and the fried garlic that has been minced. Adjust the seasoning to taste.
