500 grams beef ribs, cleaned and cut into small pieces

500 grams potatoes, cut into large cubes

3 carrots, sliced thickly

10 green beans, cut to preference

1 packet beef stock powder

- 1 teaspoon black pepper

- 3 cloves garlic
- 5 shallots

- 1 small piece cinnamon stick
- 5 cardamom pods
- 5 cloves

Steps:

Prepare the Beef Ribs:
Begin by boiling the beef ribs in water until a frothy scum forms on the surface. Remove the ribs from the pot, discard the water, and rinse the meat under clean water. Set aside. -
Simmer the Ribs:
Return the cleaned beef ribs to the pot, add the whole spices (cinnamon stick, cardamom, and cloves), and cover with fresh water. Bring to a boil and then reduce to a simmer. Cook until the beef is tender. -
Prepare the Spice Paste:
While the beef is simmering, make the spice paste. In a skillet, sautรฉ the garlic and shallots until fragrant and golden brown. Once cooked, add the spice paste to the pot with the beef ribs. -
Cook the Vegetables:
Add the potatoes and carrots to the pot. Continue to simmer until the vegetables are almost tender. Then, add the green beans and cook until all the vegetables are fully cooked. -
Season and Final Touches:
Season the soup with salt and beef stock powder, adjusting to taste. Add the chopped tomato, scallions, and celery. Stir well and cook for a few more minutes until everything is well combined and heated through. -
Serve:
Ladle the soup into bowls and garnish with fried shallots, a side of emping, and a squeeze of lime juice. Serve with chili sauce on the side for added heat if desired.
