Indonesian Beef Ribs Soup (Sup Iga Sapi)

Ingredients:

  • 1 kg beef ribs
  • 2 potatoes, peeled and cut into chunks
  • 3 carrots, peeled and sliced
  • 2 stalks green onions, chopped
  • 2 stalks celery, chopped
  • 1 tomato, chopped
  • 1/4 head of cabbage, shredded
  • 4 shallots, peeled
  • 2 garlic cloves, peeled
  • 1 tsp black pepper
  • 1/2-inch piece of ginger
  • Cooking oil, for sautéing
  • Water, for boiling
  • Salt, to taste
  • Seasoning, to taste
  • Fried shallots, for garnish
  • Optional: Lime juice and chili peppers, for added flavor

Instructions:

  1. Prepare the Beef Ribs: Begin by washing the beef ribs thoroughly. Place them in a pot, cover with water, and bring to a boil. Allow them to cook for about 15 minutes. Afterward, discard the boiling water to remove excess impurities and set the ribs aside.

  2. Prepare the Spices: While the beef ribs are boiling, grind the shallots, garlic, black pepper, and ginger into a fine paste. Heat a splash of cooking oil in a pan over medium heat. Sauté the spice paste until it becomes aromatic and golden brown.

  3. Cook the Beef Ribs: Return the beef ribs to the pot and add the sautéed spice paste. Pour in enough fresh water to cover the ingredients. Bring to a boil, then cover and cook in a pressure cooker for approximately 20 minutes, or until the ribs are tender.

  4. Prepare the Vegetables: While the ribs are cooking, peel and cut the potatoes into chunks, slice the carrots, chop the tomato, and shred the cabbage. Also, chop the green onions and celery.

  5. Combine and Simmer: Once the beef ribs are tender, release the pressure from the pressure cooker and remove the lid. Add the potatoes and carrots to the pot and continue to cook until they are tender. Next, add the cabbage, tomato, green onions, and celery. Season with salt and additional seasoning to taste. Let the soup simmer until all the vegetables are cooked through.

  6. Finish and Serve: Once the vegetables are tender and the flavors have melded together, turn off the heat. Ladle the soup into bowls and garnish with fried shallots. For an extra kick, you can add a squeeze of lime juice and sliced chili peppers to taste.
