Instructions:
-
Prepare the Beef:
Begin by marinating the beef to remove any unpleasant odors. Rub the beef cubes with lime juice and let them sit for a few minutes. In a bowl, combine minced garlic, salt, black pepper, sweet soy sauce, and margarine. Toss the beef cubes in this mixture, ensuring they are evenly coated. Allow the beef to marinate for 15 minutes. -
Grill the Beef:
Skewer the marinated beef cubes onto satay sticks. Grill the skewers over hot coals, turning occasionally, until the beef is cooked through and has a nice char. Set aside. -
Make the Peanut Sauce:
In a pan, heat the cooking oil and sauté the garlic, shallots, large red chili, and small red chilies until fragrant and softened. Transfer these ingredients to a blender, add the roasted peanuts, and blend until smooth. Pour the blended mixture back into the pan. Add water, salt, palm sugar, soy sauce, and lime juice to the pan. Stir and cook over medium heat until the sauce thickens and becomes slightly glossy. Adjust seasoning to taste and remove from heat. -
Serve:
Serve the grilled satay skewers with the rich and flavorful peanut sauce. Accompany with pickled cucumber, rice cakes, additional lime wedges, and a sprinkle of fried shallots for a complete and delicious meal.
