Ingredients:

  • 250 grams beef shank, cut into pieces
  • 2 bay leaves
  • 4 kaffir lime leaves
  • 1 stalk lemongrass, bruised
  • 1 thumb-sized piece of galangal, bruised
  • Cooking oil, as needed
  • 1.5 liters clean water
  • Salt and sugar, to taste

For the Spice Blend (blended):

  • 4 shallots
  • 3 garlic cloves
  • 1 teaspoon coriander seeds
  • 1 teaspoon black pepper
  • 2 candlenuts
  • 1 thumb-sized piece of turmeric
  • 1 thumb-sized piece of ginger

Instructions:

  1. Prepare the Beef:

    • In a large pot, combine the beef shank pieces with the blended spice mixture and 1.5 liters of clean water. Stir well to ensure the beef is evenly coated with the spices.
    • Add the bay leaves, kaffir lime leaves, bruised lemongrass, and bruised galangal to the pot.
  2. Simmer:

    • Bring the mixture to a boil over medium-high heat. Once boiling, reduce the heat to low and let it simmer. Allow the beef to cook until the water reduces and the meat becomes tender. This may take some time, so be patient and check occasionally.
  3. Check Tenderness:

    • After the water has reduced significantly, check the beef for tenderness. If the meat is not yet tender, add a little more water and continue simmering until the beef is soft and the water has reduced further.
  4. Finish the Dish:

    • Once the water has evaporated and the beef is tender, heat a bit of cooking oil in a separate pan. Add the cooked beef shank pieces and stir-fry for a few minutes until slightly crispy and fragrant.
  5. Season:

    • Season with salt and sugar to taste, adjusting as needed to balance the flavors.
  6. Serve:

    • Serve the savory beef shank stir-fry warm. It pairs beautifully with steamed rice or as a hearty side dish.
