Hearty Indonesian Beef Soup
Ingredients:
- 1/2 kg beef with bones, cut into pieces
- 4 medium potatoes, diced
- 1 medium carrot, sliced
- 5 green beans, cut
- 4 cloves garlic, minced
- 1/2 teaspoon ground nutmeg
- 1 teaspoon ground black pepper
- 1 tablespoon fried shallots
- 2 stalks celery, chopped
- 1 stalk leek, chopped
- 700 ml water
- Salt and sugar to taste
Instructions:

Prepare the Beef:
- Clean the beef and cut it into desired pieces.
- In a pot, bring 500 ml of water to a boil, add 1 tablespoon of salt, and cook the beef to remove impurities. Discard the first boiling water along with the impurities.

Cook the Beef:
- Add 700 ml of clean water to the pot with the beef and bring to a simmer. Cook for about 50 minutes, or until the beef is tender.

Add Vegetables:
- Add the diced potatoes and sliced carrots to the pot and cook until they are tender. Then, add the green beans.

Season the Soup:
- Stir in the ground nutmeg, black pepper, sugar, and salt to taste.

Prepare the Aromatics:
- In a separate pan, sauté the minced garlic in butter or vegetable oil until fragrant. Add this mixture to the pot of soup.

Finish the Soup:
- Once all ingredients are cooked through, add the chopped celery and leek. Garnish with fried shallots on top.

- Serve the soup warm, enjoying the comforting flavors of this hearty Indonesian dish.
