Tongseng Daging Sapi (Indonesian Beef Stew)

Ingredients:

  • 1/4 kg beef (cut into small pieces)
  • 5 red chilies
  • 1 tomato
  • Palm sugar (to taste)
  • Granulated sugar (to taste)
  • Sweet soy sauce (kecap manis, to taste)
  • Ground spices mix (bumbu halus)
  • 3 shallots
  • 2 cloves garlic
  • Black pepper (to taste)
  • 1/2 cup miri (or use red wine as an alternative)
  • Coriander (to taste)
  • Salt (to taste)
  • 2 red chilies (sliced)
  • Ginger (1-inch piece)
  • Bay leaves
  • Kaffir lime leaves
  • Lemongrass stalk
  • Turmeric (1-inch piece)

Instructions:

  1. Prepare the Beef:

    • Cut the beef into small pieces and rinse thoroughly. Set aside.
  2. Prepare the Spices:

    • Peel and finely slice the shallots and garlic.
    • Blend these ingredients with a piece of ginger, turmeric, and a bit of salt into a smooth paste. This will be your ground spices mix (bumbu halus).
  3. Cook the Spices:

    • Heat a little oil in a pan over medium heat. Add the ground spice mix and sauté until fragrant, releasing a wonderful aroma.
  4. Add Flavorings:

    • Pour in enough water to cover the beef. Stir in palm sugar, granulated sugar, sweet soy sauce, and salt. Mix well and bring to a simmer.
  5. Add the Beef:

    • Add the beef pieces to the pan. Continue to cook, stirring occasionally, until the beef is tender and cooked through. This may take about 45 minutes to an hour depending on the size of the beef pieces and the heat level.
  6. Add Vegetables and Herbs:

    • Slice the red chilies and add them to the pan. Also, add bay leaves, kaffir lime leaves, and a stalk of lemongrass (slightly smashed to release flavor) to enhance the aroma and taste of the dish.
  7. Adjust the Seasonings:

    • Taste the stew and adjust the seasonings with more salt, sugar, or sweet soy sauce if needed.
  8. Finish and Serve:

    • Once the beef is tender and the flavors are well blended, remove from heat. Serve the Tongseng Daging Sapi hot with steamed rice or your favorite side dishes.
