Savory Beef Stew with Indonesian Flair: Semur Daging Sapi Maknyus

Ingredients:

  • 1/2 kilogram beef, cut into cubes
  • 6 medium potatoes, peeled and diced
  • 1 sachet Kecap Bango (sweet soy sauce)
  • 2 bay leaves
  • 1 thumb-sized piece of galangal, smashed
  • 1 stick cinnamon
  • 1 whole nutmeg
  • A small amount of cooking oil for sautéing
  • 3 cups water (or more, as needed)
  • For the spice paste:
    • 4 shallots
    • 5 cloves garlic
    • 3 coriander seeds
    • A piece of ginger

Instructions:

  1. Prepare the Ingredients:

    • Thoroughly wash the beef and potatoes. Cut them into cubes, ensuring that the potatoes are of similar size to the beef for even cooking.
  2. Make the Spice Paste:

    • Blend the shallots, garlic, coriander seeds, and ginger into a smooth paste. This spice blend is crucial for infusing the stew with rich flavors.
  3. Sauté the Spice Paste:

    • Heat a small amount of cooking oil in a large pot over medium heat. Add the spice paste and sauté until it becomes fragrant and golden brown.
  4. Cook the Beef:

    • Add the cubed beef to the pot. Stir well to ensure the beef is coated with the spice paste. Cook until the beef releases its natural juices and starts to brown slightly.
  5. Add Potatoes and Aromatics:

    • Once the beef is well-browned, add the diced potatoes, galangal, cinnamon stick, nutmeg, and bay leaves. Mix everything together thoroughly.
  6. Add Water:

    • Pour in 3 to 4 cups of water, depending on how much broth you prefer. The more water you add, the more liquid you will have to cook the beef until tender. Adjust the quantity of water according to your pot size; in this recipe, 3 cups is used.
  7. Simmer the Stew:

    • Bring the mixture to a boil, then reduce the heat to low. Let it simmer until the beef is tender and the potatoes are cooked through. This can take some time, depending on the toughness of the beef and the size of the potatoes.
  8. Season the Stew:

    • Once the beef is tender, stir in the Kecap Bango (sweet soy sauce), salt, and sugar. Adjust the seasoning to taste. Allow the stew to cook until the sauce thickens and the flavors meld together.
  9. Final Touches:

    • Taste and adjust seasoning if necessary. Continue to cook until the sauce has reduced to your desired consistency and the beef is fork-tender.
  10. Serve:

    • Serve the Semur Daging Sapi Maknyus hot, ideally with a side of crispy crackers for added texture and flavor.

Enjoy this hearty Indonesian beef stew, and savor the delightful combination of sweet soy sauce and aromatic spices that make it truly irresistible!
