Tumis Kikil Sapi: A Flavorful Beef Tendon Stir-Fry

Ingredients:

  • 400 grams beef tendons (kikil sapi), cleaned and trimmed
  • 3 bird’s eye chilies (or to taste)
  • 4 shallots
  • 3 cloves garlic
  • 1 stalk lemongrass, bruised
  • 2 bay leaves
  • 1 cm piece ginger, bruised
  • Sweet soy sauce (kecap manis), to taste
  • Ground black pepper, to taste
  • Sugar, to taste
  • Salt, to taste
  • Mushroom seasoning (optional, non-MSG), to taste
  • Water, as needed
  • Fried shallots, for garnish

Instructions:

  1. Prepare the Beef Tendons: Cut the cleaned beef tendons into small cubes. In a pot, bring enough water to cover the tendons to a boil. Add the tendons and cook for about 10 minutes, or until partially cooked. Drain and set aside.

  2. Slice the Aromatics: Thinly slice the shallots and bird’s eye chilies. Set aside.

  3. Sauté the Base: In a pan, heat a small amount of oil over medium heat. Add the sliced shallots, chilies, ginger, bruised lemongrass, and bay leaves. Sauté until the aromatics are fragrant.

  4. Combine Ingredients: Add a splash of water to the pan, enough to create a small amount of sauce. Stir in the partially cooked beef tendons.

  5. Season and Simmer: Season with sugar, salt, black pepper, and mushroom seasoning if using. Finally, pour in the sweet soy sauce to taste. Stir well to combine.

  6. Finish Cooking: Let the mixture simmer briefly, just long enough to allow the flavors to meld. Since the beef tendons are already partially cooked, avoid overcooking.

  7. Garnish and Serve: Sprinkle fried shallots on top before serving. Enjoy your Tumis Kikil Sapi with steamed white rice.
