Tumis Kikil Sapi: A Flavorful Beef Tendon Stir-Fry
Ingredients:
- 400 grams beef tendons (kikil sapi), cleaned and trimmed
- 3 bird’s eye chilies (or to taste)
- 4 shallots
- 3 cloves garlic
- 1 stalk lemongrass, bruised
- 2 bay leaves
- 1 cm piece ginger, bruised
- Sweet soy sauce (kecap manis), to taste
- Ground black pepper, to taste
- Sugar, to taste
- Salt, to taste
- Mushroom seasoning (optional, non-MSG), to taste
- Water, as needed
- Fried shallots, for garnish

Prepare the Beef Tendons: Cut the cleaned beef tendons into small cubes. In a pot, bring enough water to cover the tendons to a boil. Add the tendons and cook for about 10 minutes, or until partially cooked. Drain and set aside.

Slice the Aromatics: Thinly slice the shallots and bird’s eye chilies. Set aside.

Sauté the Base: In a pan, heat a small amount of oil over medium heat. Add the sliced shallots, chilies, ginger, bruised lemongrass, and bay leaves. Sauté until the aromatics are fragrant.

Combine Ingredients: Add a splash of water to the pan, enough to create a small amount of sauce. Stir in the partially cooked beef tendons.

Season and Simmer: Season with sugar, salt, black pepper, and mushroom seasoning if using. Finally, pour in the sweet soy sauce to taste. Stir well to combine.

Finish Cooking: Let the mixture simmer briefly, just long enough to allow the flavors to meld. Since the beef tendons are already partially cooked, avoid overcooking.
