Tongseng Daging Sapi

Ingredients:

  • 250 grams of beef, boiled and cut into pieces
  • 5 cabbage leaves, chopped
  • 1 onion, sliced
  • 3 green onions, chopped
  • 3 tomatoes, chopped
  • 10 bird’s eye chilies, chopped
  • 2 bay leaves
  • 4 stalks of lemongrass, bruised
  • 1 tablespoon of palm sugar
  • 5 tablespoons of sweet soy sauce
  • Salt to taste
  • Water as needed

Spice Paste:

  • 6 shallots
  • 4 cloves of garlic
  • 1 thumb-sized piece of ginger
  • 1 thumb-sized piece of turmeric
  • 1 thumb-sized piece of galangal
  • 1 teaspoon of ground pepper
  • 1 tablespoon of coriander seeds

Preparation Steps:

  1. Prepare the Spice Paste: Using a food processor or mortar and pestle, blend the shallots, garlic, ginger, turmeric, galangal, ground pepper, and coriander seeds until you have a smooth paste.

  2. Sauté the Aromatics: In a large pan or wok, heat some oil over medium heat. Add the spice paste, bay leaves, and bruised lemongrass stalks. Sauté until fragrant, which should take about 3-5 minutes.

  3. Add Seasonings: Stir in the sweet soy sauce, palm sugar, and a pinch of salt. Add a little water to prevent the mixture from drying out, and continue to stir.

  4. Incorporate the Beef: Add the sliced beef into the pan, mixing well to coat the meat with the aromatic sauce. Allow it to simmer for a few minutes so the flavors meld together.
