Tongseng Daging Sapi Recipe

Ingredients:

  • 250 grams beef, cut into cubes
  • Spice Paste:
    • 5 shallots
    • 3 cloves garlic
    • 1 cm turmeric
    • 1 cm ginger
    • 3 candlenuts
    • 1 teaspoon coriander
    • ½ teaspoon pepper
    • 3 dried red chilies
  • Additional Spices:
    • 1 stalk lemongrass, bruised
    • 3 bay leaves
    • 1 onion, sliced
  • Vegetables:
    • 1 tomato, chopped
    • 200 grams cabbage, shredded
    • 1 stalk celery, chopped
    • 2-3 bird’s eye chilies, sliced (optional)
  • Seasonings:
    • 1 tablespoon soy sauce
    • ½ teaspoon salt
    • 1 tablespoon palm sugar
    • 1 teaspoon granulated sugar
    • ½ packet coconut milk (about 200 ml)

Instructions:

  1. Prepare the Spice Paste: Begin by finely grinding the shallots, garlic, turmeric, ginger, candlenuts, coriander, pepper, and dried red chilies until a smooth paste is formed.

  2. Sauté the Spice Paste: Heat a small amount of oil in a large pot over medium heat. Add the spice paste and sauté until fragrant, which should take about 2-3 minutes.

  3. Add Additional Spices: Incorporate the bruised lemongrass, bay leaves, and sliced onion into the pot. Stir well to combine.

  4. Cook the Beef: Add the beef cubes to the pot. Cook until the beef is browned on all sides. Pour in 2 cups of water and bring to a boil. Reduce the heat and let it simmer until the beef is tender, which will take approximately 1 hour.

  5. Season the Dish: Stir in the salt, soy sauce, palm sugar, and granulated sugar. Continue cooking until the beef is fully tender and the flavors meld together.

  6. Add Coconut Milk: Pour in the coconut milk and simmer for an additional 10-15 minutes, allowing the sauce to thicken and reduce slightly.

  7. Incorporate Vegetables: Add the chopped tomato, shredded cabbage, chopped celery, and bird’s eye chilies (if using). Mix well and cook until the vegetables are tender.

  8. Final Touches: Taste and adjust seasoning if necessary.
