Tongseng Sapi Recipe

Ingredients:

  • 200 grams beef
  • 1 cm ginger, crushed
  • 2 cm galangal, crushed
  • 1 stalk lemongrass, crushed
  • 1/2 stick cinnamon
  • 2 kaffir lime leaves
  • 3 tablespoons Bango sweet soy sauce
  • Sugar and salt to taste
  • Cabbage, chopped into small squares
  • 1 small tomato, chopped
  • Spring onions, chopped to taste
  • 1/2 liter water

Ground Spices:

  • 6 shallots
  • 5 garlic cloves
  • 2 large red chilies
  • 8 bird’s eye chilies
  • 1 teaspoon peppercorns
  • 2 candlenuts
  • 1 cm turmeric

Instructions:

  1. Boil the Beef: Begin by boiling the beef until it becomes tender. Once cooked, remove from the pot and cut the beef into bite-sized pieces according to your preference.

  2. Prepare the Spice Paste: Blend the shallots, garlic, large red chilies, bird’s eye chilies, peppercorns, candlenuts, and turmeric into a smooth paste.

  3. Sauté the Spice Paste: Heat a bit of oil in a pan and sauté the spice paste until it becomes fragrant. Then, add the crushed ginger, galangal, lemongrass, kaffir lime leaves, and cinnamon stick. Continue to sauté until all the spices are well-blended and aromatic.

  4. Cook the Beef: Add the beef pieces to the pan and mix well with the spices. Pour in the beef broth (from the initial boiling), and let it simmer until the liquid slightly reduces.

  5. Add Vegetables and Seasoning: Once the broth has reduced, add the chopped tomatoes, sweet soy sauce, sugar, and salt. Taste and adjust the seasoning as needed.

  6. Final Touches: Finally, add the chopped cabbage and spring onions. Stir and cook until the vegetables are tender.

  7. Serve: Once everything is well-cooked, remove from heat and serve the Tongseng Sapi hot. Enjoy with steamed rice for a complete meal.
