Preparation Steps

  1. Roasting the Coconut:

    • Begin by dry roasting the grated coconut in a pan over medium heat until it turns slightly dry and golden. Set aside.
  2. Preparing the Spice Paste:

    • In a food processor, blend together the shallots, garlic, galangal, turmeric, ginger, red chilies, bird’s eye chilies, and candlenuts until smooth.
    • In a large pan, heat a small amount of oil and sauté the spice paste. Add the kaffir lime leaves, bay leaves, crushed lemongrass, and crushed ginger to the pan. Sauté until fragrant.
