Ingredients
- 1/2 coconut, grated
- 1/2 kg beef

- 1 piece of turmeric (2 cm)
- 3 red chilies
- 10 bird’s eye chilies
- 2 cm galangal
- 2 candlenuts
- 2 cm ginger, crushed

- Begin by dry roasting the grated coconut in a pan over medium heat until it turns slightly dry and golden. Set aside.

- In a food processor, blend together the shallots, garlic, galangal, turmeric, ginger, red chilies, bird’s eye chilies, and candlenuts until smooth.
- In a large pan, heat a small amount of oil and sauté the spice paste. Add the kaffir lime leaves, bay leaves, crushed lemongrass, and crushed ginger to the pan. Sauté until fragrant.
