Lele Mangut Without Coconut Milk

Ingredients:

  • 1/2 kg catfish (lele)
  • 5 shallots
  • 3 cloves garlic
  • 5 red chilies
  • 1 thumb-sized piece of turmeric
  • 1/2 thumb-sized piece of ginger
  • 1/2 thumb-sized piece of galangal
  • 1 tomato
  • Black pepper
  • Salt
  • Granulated sugar
  • Vegetables for garnish: long beans, basil

Steps:

  1. Prepare the Catfish: Begin by frying the catfish until it is cooked through, but avoid making it too crispy. Once done, set the fish aside.

  2. Blend the Spices: In a blender, combine shallots, garlic, red chilies, turmeric, ginger, and galangal. Blend until smooth.

  3. Cook the Spice Paste: Heat a bit of oil in a pan over medium heat. Add the blended spice paste and sauté briefly to release its aroma. Add just enough water to create a sauce consistency.

  4. Season the Sauce: Adjust the seasoning by adding salt, black pepper, and granulated sugar to taste. Allow the mixture to simmer until it begins to boil.

  5. Add Vegetables and Fish: Gently introduce the fried catfish and long beans into the pan. Cook for a few minutes, then add fresh basil leaves.

  6. Final Touch: Once everything is well combined and the vegetables are tender, the Lele Mangut is ready to be served.

Alternate Serving Suggestion: Arrange the fried catfish on a serving dish and pour the prepared sauce over the top before serving.

Enjoy this traditional Indonesian Lele Mangut as a flavorful and aromatic dish perfect for any meal!
