Semur Ayam Campur Telur

Ingredients:

Chicken (cut into pieces) 1/2 kg
Hard-boiled eggs 6 pieces
Water 100 ml
Sweet soy sauce (kecap) 1/2 glass
Ground nutmeg 1/4 tsp
Ground cinnamon 1/4 tsp
Lemongrass 1 stalk
Bay leaves 1 leaf
Sugar To taste
Salt To taste
Powdered broth (kaldu) To taste
Spice Paste (bumbu halus)
Shallots (bawang merah) 5 pieces
Garlic (bawang putih) 4 cloves
Ginger (jahe) 2 cm

Instructions:

  1. Begin by thoroughly cleaning the chicken pieces and set them aside. Boil the eggs until hard, then peel and set aside.
  2. In a pan, heat some oil and sauté the ground spice paste until fragrant. Add the lemongrass and bay leaf, continuing to sauté until aromatic.
  3. Add the chicken pieces to the pan and stir well to combine. Pour in the water and sweet soy sauce, then season with sugar, salt, ground nutmeg, ground cinnamon, and powdered broth.
  4. Gently add the hard-boiled eggs to the mixture, stirring carefully to coat them in the sauce. Cover the pan and allow it to simmer until the chicken is fully cooked and the sauce has reduced to your desired consistency.
  5. Taste and adjust the seasoning as needed before removing from heat. Serve hot, garnished with crispy fried shallots for an added crunch and flavor.
