Gongso Ayam and Egg

Ingredients:

  • 1 piece shredded chicken breast
  • 1 egg
  • 1 head cabbage, thinly sliced
  • 1 tomato, chopped
  • 1 green onion, chopped
  • Fresh parsley, chopped
  • 1 clove garlic, minced
  • 3 shallots, thinly sliced
  • 1 onion (optional), chopped
  • 3 red chilies, sliced
  • Salt, to taste
  • Candlenuts, ground
  • Black pepper, to taste
  • Sweet soy sauce
  • Chicken bouillon powder
  • Cooking oil
  • Water

Instructions:

  1. Prepare the Aromatics: Slice the shallots and mince the garlic. In a blender or food processor, combine the red chilies, candlenuts, black pepper, and salt to create a smooth paste.

  2. Sauté the Base: Heat a generous amount of cooking oil in a pan over medium heat. Add the sliced shallots and the freshly blended spice paste. Sauté until fragrant and the shallots have softened.

  3. Cook the Egg: Pour the beaten egg into the pan and stir gently to scramble it. Allow the egg to cook through.

  4. Add Chicken and Vegetables: Incorporate the shredded chicken and thinly sliced cabbage into the pan. Pour in enough water to cover the ingredients and sprinkle in a bit of chicken bouillon powder. Stir well.

  5. Flavor and Simmer: Add the chopped tomato and a splash of sweet soy sauce. Stir to combine all the flavors. Let the mixture simmer until the cabbage is tender and the flavors have melded together.

  6. Garnish and Serve: Remove from heat and garnish with chopped green onions and fresh parsley. Optionally, you can add fried shallots for extra crunch and flavor.
