Mie Ayam Jamur: A Delicious Indonesian Noodle Dish

Ingredients:

  • 200 grams chicken breast fillet
  • 1/2 cup umbrella mushrooms
  • 250 grams fresh egg noodles (available at supermarkets)
  • 1 tablespoon sweet soy sauce (kecap manis)
  • 2-3 tablespoons oyster sauce
  • 2 cloves garlic
  • 1 shallot
  • 2 eggs
  • Salt and pepper, to taste
  • Mushroom broth powder, to taste
  • 1 tablespoon soy sauce (kecap asin)
  • 1 teaspoon sesame oil
  • Cooking oil

Instructions:

  1. Prepare the Garlic Oil:
    Begin by heating about 3 tablespoons of cooking oil in a frying pan. Add finely chopped garlic and fry until it becomes golden brown and crispy. Once done, transfer both the garlic oil and crispy garlic to a serving bowl. Set aside.

  2. Cook the Chicken and Mushrooms:
    Cut the chicken breast into small cubes. Finely chop the garlic and shallot. In a separate pan, heat some oil and sauté the chopped garlic and shallot until fragrant. Add the diced chicken to the pan and cook until it is fully cooked through. Then, add the sliced mushrooms and stir-fry briefly.

  3. Season the Chicken Mixture:
    To the chicken and mushroom mixture, add the sweet soy sauce, oyster sauce, salt, pepper, and mushroom broth powder. Stir well to combine and adjust the seasoning to your taste.

  4. Cook the Noodles:
    In a pot, bring water to a boil and add 1 teaspoon of salt. Add the fresh egg noodles and cook briefly according to the package instructions, being careful not to overcook them. Once cooked, drain the noodles and set them aside.

  5. Prepare the Eggs:
    Keep the noodle cooking water in the pot. Crack the eggs into the pot and allow them to cook gently for about 1 minute, or until they reach a soft-boiled consistency. Once the eggs are cooked to your liking, carefully transfer them to a bowl.

  6. Assemble the Dish:
    In a serving bowl, combine the garlic oil, soy sauce, and sesame oil. Mix well. Add the cooked noodles to the bowl and toss to coat them evenly with the garlic oil mixture. Top the noodles with the chicken and mushroom mixture. Finally, place the soft-boiled eggs on top.

  7. Serve and Enjoy:
