  • 1 can (65 cc) coconut milk (Kara)

  2. Blend the Spice Paste: Combine the candlenuts, garlic, shallots, turmeric, galangal, and red chilies in a blender or food processor. Blend until you achieve a smooth paste.

  3. Cook the Coconut Milk and Spice Paste: Pour the coconut milk into a large pan or wok. Add the spice paste to the coconut milk. There’s no need to add extra oil, as the coconut milk is already rich and fatty.

  4. Add Chicken and Herbs: Incorporate the chicken gizzards and hearts into the pan. Add bay leaves, kaffir lime leaves, lemongrass, and galangal. Stir well to combine.

  5. Simmer the Dish: Cook over medium heat, stirring occasionally, until most of the liquid has evaporated and the dish has thickened. This process will allow the flavors to meld together and the chicken to become tender.
