Indonesian Chicken Noodle Soup (Mie Ayam)
Ingredients:
- 1/2 kg chicken fillet, diced
- 1/2 kg chicken feet (optional)
- Chicken skin for frying
- Cooking oil
- 2 cloves garlic, chopped
- Yellow noodles (mie kuning)
- Bunch of mustard greens (sawi)
- Spring onions
- Celery leaves
- 1 lemongrass stalk, bruised
- 1 kaffir lime leaf
- 1 bay leaf
- Bruised galangal
- Fried shallots
- Sweet soy sauce (kecap manis)
- Soy sauce (kecap asin)
For Sambal:
- 15 bird’s eye chilies
- 2 cloves garlic
- Ground spices: 5 shallots, 2 cloves garlic, 1 thumb-sized ginger, 1 thumb-sized turmeric, 1 candlenut, ground pepper
Instructions:

Prepare Chicken Oil:
Heat cooking oil and fry chopped garlic and chicken skin until crispy. Set aside. -
Prepare Chicken and Broth:
Clean and dice the chicken fillet. Cook chicken feet and optional chicken parts in 500 ml water until tender. Set aside the broth. -
Prepare Spice Paste:
Sauté ground spices until fragrant. Add lemongrass, kaffir lime leaf, bay leaf, and galangal until aromatic and the color changes. -
Cook Chicken Noodle Soup:
Pour the sautéed spice paste into the chicken broth along with diced chicken. Add sugar, salt, chicken stock powder, and sweet soy sauce. Cook until the flavors meld. Adjust seasoning to taste. -
Serve:
In a serving bowl, add a tablespoon of chicken oil and 2 drops of soy sauce. Mix well. Add yellow noodles, mustard greens, and bean sprouts. Pour chicken and feet over the noodles. Add fried shallots and sambal. Serve hot.
