Pangsit Mie Ayam Recipe

Pangsit Mie Ayam is a delightful Indonesian noodle dish topped with flavorful chicken and garnished with a savory broth. This recipe guides you through creating the perfect combination of tender chicken, aromatic spices, and a rich broth, all served over soft egg noodles. Perfect for a comforting meal or to impress your guests with a taste of Indonesian cuisine.

Ingredients

For the Noodles:

  • 5 servings egg noodles, cooked with a pinch of salt and a dash of oil

For the Vegetables:

  • Lettuce leaves, as needed
  • Soy sauce, to taste
  • Ground black pepper, to taste
  • 2 scallions, finely sliced
  • Fried shallots, for garnish

For the Chicken Topping:

  • 300 grams chicken breast, cleaned and separated into meat, skin, and bones
  • 1 thumb-sized piece ginger, finely chopped
  • 3 cloves garlic, minced
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground black pepper
  • Cooking oil, as needed

For the Chicken Oil:

  • Chicken skin, cleaned and trimmed
  • 2 cloves garlic, crushed
  • 1 teaspoon coriander powder
  • Vegetable oil, as needed

For the Broth:

  • Chicken bones, as needed
  • 1 liter water
  • Fried garlic slices, crushed
  • 1 thumb-sized piece ginger, crushed
  • 1 teaspoon salt
  • 1 teaspoon sugar
  • 1/2 teaspoon ground black pepper
  • 1 teaspoon chicken bouillon powder

Instructions

  1. Prepare the Chicken Topping:

    • Blend the chicken breast until smooth. In a pan, heat a little oil and sauté the minced garlic and ginger until fragrant. Add the blended chicken, salt, and ground black pepper. Stir well and cook until the chicken is dry and the moisture has evaporated. Adjust seasoning to taste. Remove from heat and set aside.
  2. Make the Chicken Oil:

    • In a pan, heat some oil and sauté the crushed garlic. Add the cleaned chicken skin and coriander powder. Stir constantly, pressing the skin to release the chicken fat. Cook over low heat to prevent burning or drying out. Once the oil is extracted, remove from heat and set aside.
  3. Prepare the Broth:

    • In a large pot, boil the chicken bones with 1 liter of water. Add the fried garlic slices and crushed ginger. Simmer until the liquid is reduced. Turn off the heat, strain the broth, and return it to the pot. Season with salt, sugar, ground black pepper, and chicken bouillon powder. Adjust seasoning as needed and cook until the flavors are well-blended.
  4. Assemble the Dish:

    • In a serving bowl, add 1 tablespoon of chicken oil, 1/2 tablespoon of soy sauce, and a pinch of ground black pepper. Mix well. Add one serving of cooked noodles and toss to combine with the seasoning. Top with the chicken mixture, fried shallots, and sliced scallions. Garnish with lettuce, pickled chili, and fried or boiled wontons (as desired).
  5. Serve:

    • Serve the Pangsit Mie Ayam hot, with additional soy sauce or chili sauce on the side if desired.

Notes
