Homemade Chicken Soy Sauce Recipe

Ingredients:

  • 1/2 kg chicken, cut into pieces
  • Spice Paste:
    • 3 cloves garlic
    • 7 shallots
    • Bird’s eye chilies and large red chilies, to taste
    • 2 cm ginger
    • Ground pepper and nutmeg, to taste
    • 1 thumb-sized galangal
    • 4 candlenuts

Steps:

  1. Boil water in a pot, then add the chicken pieces and simmer until tender.
  2. Blend all the ingredients for the spice paste until smooth.
  3. Heat oil in a pan, then sauté the spice paste until fragrant.
  4. Add 3 bay leaves and 2 lemongrass stalks (bruised) to the pan.
  5. Once the spice paste is cooked, pour in 1 cup of water.
  6. Season with salt, sugar, chicken broth powder, and tamarind to taste.
  7. When the seasoning is just right, add the chicken pieces.
  8. Reduce the heat and let it simmer until the sauce thickens.
  9. Serve hot.
