Homemade Chicken Soy Sauce Recipe
Ingredients:
- 1/2 kg chicken, cut into pieces
- Spice Paste:
- 3 cloves garlic
- 7 shallots
- Bird’s eye chilies and large red chilies, to taste
- 2 cm ginger
- Ground pepper and nutmeg, to taste
- 1 thumb-sized galangal
- 4 candlenuts
Steps:
- Boil water in a pot, then add the chicken pieces and simmer until tender.
- Blend all the ingredients for the spice paste until smooth.
- Heat oil in a pan, then sauté the spice paste until fragrant.
- Add 3 bay leaves and 2 lemongrass stalks (bruised) to the pan.
- Once the spice paste is cooked, pour in 1 cup of water.
- Season with salt, sugar, chicken broth powder, and tamarind to taste.
- When the seasoning is just right, add the chicken pieces.
- Reduce the heat and let it simmer until the sauce thickens.
- Serve hot.
