Instructions

  1. Prepare the Eggs: Begin by boiling the eggs until hard-boiled, then set aside to cool.
  2. Prepare the Chicken: Clean and cut the chicken into desired pieces.
  3. Make the Spice Paste: In a blender, combine shallots, garlic, roasted candlenuts, and roasted turmeric, then blend until smooth.
  4. Sauté the Spice Paste: Heat some oil in a pan and sauté the spice paste along with lemongrass, galangal, and bay leaves until fragrant.
  5. Cook the Chicken: Add the chicken pieces to the pan and stir-fry until they change color, then pour in enough water to cover the chicken.
  6. Add Eggs and Tofu: Once the chicken starts to cook, add the boiled eggs (cut in half) and the tofu, which should be cut into cubes.
  7. Season the Dish: Sprinkle in the ground coriander, salt, sugar, pepper, and chicken broth powder. Allow the mixture to simmer until the chicken is tender.
  8. Finish with Coconut Milk: Finally, pour in the coconut milk and taste for seasoning. Bring to a gentle boil, stirring carefully to prevent the coconut milk from curdling.
