Telor Dadar (Indonesian-Style Egg Pancake)

This delightful Indonesian dish, Telor Dadar, is a savory egg pancake brimming with the flavors of tender chicken, mushrooms, and aromatic herbs. Perfect for breakfast or a light meal, this recipe is simple yet packed with taste.

Ingredients:

  • 5 large eggs
  • 1 chicken thigh, diced
  • 5 button mushrooms, sliced
  • 4 stalks of scallions, finely chopped
  • 1 turmeric leaf, finely sliced (optional for authenticity)
  • 3 red shallots, thinly sliced
  • 1 clove garlic, minced
  • 3 bird’s eye chilies, finely chopped (adjust to taste)
  • 1/2 teaspoon ground white pepper
  • 2 tablespoons rice flour, dissolved in enough water to make a slurry
  • Salt to taste
  • Chicken bouillon powder to taste
  • Cooking oil for frying

Instructions:

  1. Prepare the Ingredients:

    • Slice the red shallots, garlic, bird’s eye chilies, chicken thigh, and button mushrooms into thin, bite-sized pieces.
    • Finely chop the scallions and slice the turmeric leaf if using.
  2. Cook the Filling:

    • Heat a bit of oil in a skillet over medium heat. Sauté the sliced red shallots and garlic until they become translucent and fragrant.
    • Add the diced chicken and sliced mushrooms to the skillet. Cook until the chicken is browned and the mushrooms are tender.
    • Stir in the chopped chilies, salt, and chicken bouillon powder. Cook for an additional minute, then remove from heat and set aside.
  3. Prepare the Egg Mixture:

    • In a mixing bowl, whisk the eggs until well beaten.
    • Add the finely chopped scallions, turmeric leaf (if using), and the cooked chicken-mushroom mixture.
    • Season the mixture with ground white pepper, and salt to taste. Stir in the rice flour slurry until everything is well combined.
  4. Cook the Telor Dadar:

    • Heat a generous amount of oil in a non-stick skillet over medium-high heat until hot.
    • Pour the egg mixture into the skillet, spreading it out evenly.
    • Reduce the heat to low and cover the skillet with a lid. Allow the egg pancake to cook undisturbed until the edges turn golden brown and the center is set.
    • Carefully flip the pancake to cook the other side until it is golden and cooked through.
  5. Serve:

    • Once both sides are perfectly golden and crispy, remove the Telor Dadar from the skillet.
    • Cut into wedges and serve warm. Enjoy it as a delicious and satisfying meal on its own or with a side of fresh vegetables.

This Telor Dadar recipe captures the essence of Indonesian home cooking with its combination of tender chicken, earthy mushrooms, and fragrant herbs. The result is a deliciously satisfying egg pancake that’s sure to please everyone at the table.
