Krengsengan Beef Ribs Recipe

Ingredients:

  • 1 kg beef ribs, boiled until tender and separated from the bones

For the Spice Mix:

  • 5 cloves garlic, thinly sliced
  • 10 shallots, thinly sliced
  • 15 bird’s eye chilies, sliced
  • 5 red chilies, sliced
  • Galangal (laos), finely chopped
  • Ginger, finely chopped
  • Palm sugar
  • Salt
  • Ground black pepper
  • Shrimp paste (petis udang)
  • 1 tomato, chopped
  • Sweet soy sauce (kecap manis)

Instructions:

  1. Prepare the Aromatics:
    Heat a generous amount of oil in a large pan over medium heat. Sauté the garlic, shallots, bird’s eye chilies, and red chilies until they are fragrant and the shallots turn translucent.

  2. Add Key Ingredients:
    Incorporate the chopped tomato and shrimp paste into the pan. Stir well and let the mixture cook until the tomatoes are softened and everything is well combined. Add palm sugar to taste, adjusting the sweetness to your preference.

  3. Simmer with Broth:
    Pour in the beef broth (from the boiled beef ribs) and bring the mixture to a boil. Add the galangal and ginger. Allow it to simmer for a few minutes to let the flavors meld.

  4. Add the Beef:
    Introduce the pre-cooked beef ribs into the pan. Stir to ensure the beef is well coated with the spice mixture. Continue cooking until the beef is heated through and the flavors have melded together.

  5. Season and Finish:
    Drizzle in the sweet soy sauce and stir thoroughly. Taste the dish and adjust seasoning with additional salt, sugar, or pepper if needed.

  6. Serve:
    Serve the Krengsengan Beef Ribs hot, garnished with fresh herbs if desired. This dish is perfect for serving a group, making approximately 10 servings.
