Telur Dadar Gurih (Savory Indonesian Omelette)

Ingredients:

  • 2-3 large eggs (chicken or duck)
  • 4 shallots
  • 2 garlic cloves
  • Salt, to taste
  • Optional: seasoning or flavor enhancer (can be omitted)
  • Cooking oil, for frying

Instructions:

  1. Prepare the Egg Mixture: Crack the eggs into a bowl and beat them thoroughly. Add salt and optional seasoning to taste, then set the mixture aside.

  2. Slice the Aromatics: Thinly slice the shallots and garlic cloves.

  3. Sauté the Aromatics: Heat a pan over medium heat and add enough cooking oil to coat the bottom. Once the oil is hot, add the sliced shallots and garlic. Sauté until the shallots are translucent and fragrant, but be careful not to let them brown too much. The goal is to release the aroma without overcooking the ingredients.

  4. Combine Aromatics with Eggs: Remove the shallots and garlic from the pan, leaving the oil behind. Mix the sautéed shallots and garlic into the beaten eggs, stirring well to combine.

  5. Fry the Omelette: If the remaining oil in the pan seems insufficient, add a bit more oil as needed to ensure there’s enough for frying. Heat the oil until it’s hot but not smoking. Pour the egg mixture into the pan, spreading it evenly. Let it cook undisturbed until the edges start to set and turn golden. Carefully flip the omelette to cook the other side, ensuring it achieves a lovely golden color and is cooked through.

  6. Serve: Once the omelette is fully cooked and beautifully golden, transfer it to a plate. Serve immediately and enjoy your savory Telur Dadar Gurih!
