Opor Ayam Kagetan: A Delightful Indonesian Chicken Stew

Ingredients:

  • 1/2 chicken (cut into pieces)
  • 1 small pack of Kara coconut milk
  • 1 pack of beef bouillon powder (Masako)
  • 1 stalk of lemongrass, bruised
  • 1 bay leaf
  • A few kaffir lime leaves
  • 10 whole bird’s eye chilies
  • Sugar, to taste
  • Water, as needed

For the Spice Paste:

  • 5 shallots
  • 4 cloves garlic
  • 2-inch piece of turmeric
  • 2-inch piece of ginger
  • 2-inch piece of galangal
  • 1 teaspoon ground coriander
  • 1 teaspoon ground black pepper
  • 1 lime, juiced
  • Fried shallots, for garnish

Instructions:

  1. Prepare the Chicken:
    Start by cleaning the chicken pieces thoroughly. Place them in a pot with enough water to cover. Bring to a boil and cook until the chicken is half cooked. Drain and set aside.

  2. Make the Spice Paste:
    Combine the shallots, garlic, turmeric, ginger, and galangal in a blender or food processor. Blend until you achieve a smooth paste.

  3. Cook the Spice Paste:
    Heat a little oil in a large skillet or saucepan over medium heat. Add the spice paste and cook, stirring frequently, until the mixture becomes fragrant and starts to separate from the oil.

  4. Add Aromatics:
    To the skillet, add the kaffir lime leaves, bay leaf, and bruised lemongrass. Stir well to combine with the spice paste.

  5. Simmer the Chicken:
    Pour in the Kara coconut milk and enough water to create a sauce. Stir and bring to a simmer. Add the partially cooked chicken and bird’s eye chilies. Continue to cook until the chicken is fully cooked and tender.

  6. Season the Stew:
    Stir in the sugar, beef bouillon powder, and additional Kara coconut milk if needed. Adjust the seasoning to your taste and allow the stew to simmer until the flavors are well melded and the sauce has thickened slightly.

  7. Finish and Serve:
