Asem2 Bandeng Kuning Presto: A Delightful Indonesian Recipe

Ingredients:

  • 1 kg fresh bandeng (milkfish)
  • 2 fingers of turmeric, peeled
  • 2 fingers of ginger, peeled
  • 1 stalk lemongrass, bruised
  • 2 leaves of salam (Indonesian bay leaves)
  • 4 cloves garlic, thinly sliced
  • 3 shallots, thinly sliced
  • 10 red chili peppers
  • 5 bilimbi fruits (asam belimbing)
  • Salt, to taste
  • 1 large tomato, chopped
  • A pinch of sugar
  • Seasoning powder, to taste
  • 3 cups water

Instructions:

  1. Prepare the Fish: Start by thoroughly cleaning the fresh bandeng. After washing, cut each fish into three equal parts to ensure even cooking.

  2. Combine Ingredients: In a pressure cooker, combine the cut fish with all the prepared ingredients: turmeric, ginger, lemongrass, salam leaves, sliced garlic, sliced shallots, red chili peppers, bilimbi fruits, salt, chopped tomato, a pinch of sugar, and seasoning powder.

  3. Add Water: Pour in the water, ensuring that the ingredients are well submerged.

  4. Cook: Seal the pressure cooker and cook on low heat for approximately 45 minutes. This allows the spices to infuse deeply into the fish, creating a rich and flavorful dish.

  5. Serve: Once cooked, carefully release the pressure, and your Asem2 Bandeng Kuning Presto is ready to be served. This dish pairs beautifully with steamed rice and a side of fresh vegetables.
