Gulai Ikan Kakap: A Flavorful Indonesian Delight

Ingredients

For the Fish

  • 1 kg red snapper (ikan kakap), cleaned and cut into 2 or 3 pieces
  • Juice of 1 lime
  • Salt, to taste

For the Spice Paste

  • 10 red bird’s eye chilies (cabe rawit merah)
  • 2 large red tomatoes
  • 4 cloves garlic
  • 6 shallots
  • 2 roasted candlenuts (kemiri)
  • 3 large red chilies (cabai merah besar)
  • 2 pieces of tamarind (asam kandis)
  • 1 piece of fresh turmeric (kunyit)
  • 1 piece of ginger (jahe)
  • ½ teaspoon ground coriander (ketumbar halus)
  • ½ teaspoon black pepper (mrica)
  • Salt, to taste
  • Sugar, to taste
  • 1 cube of Royco seasoning

Additional Ingredients

  • 3 bay leaves (daun salam)
  • 3 kaffir lime leaves (daun jeruk wangi)
  • 2 stalks lemongrass (serai), bruised
  • 1 piece of galangal (laos), bruised
  • 1 packet of coconut milk (santan kara)
  • Water, as needed

Instructions

Preparing the Fish

  1. Clean the Fish: Start by thoroughly cleaning the red snapper and cutting it into 2 or 3 pieces. Rub the fish with lime juice and sprinkle with salt. Set aside to marinate while you prepare the spices.

Cooking the Spice Paste

  1. Sauté the Spices: In a large pot, heat a little oil over medium heat. Add the finely ground spice paste along with the bruised lemongrass, galangal, bay leaves, kaffir lime leaves, and tamarind. Sauté until fragrant and well combined, releasing the wonderful aroma of the spices.
